Jesse and Chester: [notice the undelivered pizzas around the house] Uh-oh.

When Sidney comes out of the closet and stabs Billy with an umbrella, the stunt man was supposed to hit a pad on Skeet Ulrich's chest. The first hit got the pad but the second one slipped and hit him in the chest (you can see it in his reaction). Wes Craven kept it in because of its authenticity.
When Max asks his father, "If I keep making this face, will it get stuck that way?", and Fletcher replies, "No. In fact, some people make a good living that way", he was obviously referring to himself.
Although the part was written especially for Macaulay Culkin by John Hughes, several hundred other boys were auditioned by director Chris Columbus just because he wanted to confirm that Culkin was right for the part.
The director picked the grocery store that the movie was filmed in because of its "run-down, big city" quality. When the producers paid the owner of the supermarket for permission to film there, the owners took some of that money and repainted and repaired the store, for a more "hollywood" look. The director and producers were understandably unhappy with this, since the only reason they picked the store was how it looked in the first place. The producers, after getting consent from the store, hired a crew to bring the store back to what it had looked like before. The finished product is what you see in the film.
Will Smith was approached to play Neo, but turned down the offer in order to star in Wild Wild West (1999). He later admitted in an interview with Wired magazine that, at the time, he "wasn't smart enough as an actor".
